First is the dry method. This is the traditional way of processing the coffee and it’s still one of the most common methods that have been used by many countries across the globe. In here, there are only limited water resources and the freshly picked cherries are merely spread out on huge surfaces just like tables or floor to dry in the sun. This process might last for several weeks, depending on the weather. The other process is the wet method. In this process, the pulp of the cherries is removed after harvesting and the bean is dried with only the skin left on. Then, depending with factors like the state of the beans, the weather and the elevation, the beans will be stored in the tank for 12 to 48 hours.

​Drying the Beans

​Once the beans have been processed by the wet method, then the next step to do with the crushed and fermented beans must now be dried around 11 percent wetness and pile them in a storeroom. These beans will undergo, either sun dried method or the machine dried method. When the beans are completely dry, it will be denoted as “parchment coffee”, and then soon after that, it will be equipped for exporting.

​Grinding the Beans

​The following step is the grinding of the beans. Grinding includes the process such as hulling, refining, grading and sorting. Hulling is a process that utilizes a machine to remove the entire dried dusk of the dried cherries. While, refining is not a compulsory procedure in which any silver skin that stay behind the beans after hulling is taken away in a polishing machine. On the other hand, grading and sorting is a procedure that can be accomplished using sophisticated machines to ensure the production of the finest quality of beans that are exported all over the world.

​Distributing and Exporting the Beans
