This recipe was created and presented during my cooking classes last year. It was a personal favourite because I actually came up with the recipe myself. I took a look at some of the traditional pasta sauce recipes passed down from my mother and basically deconstructed and then reconstructed them to be gluten free, vegan and RAW.
What does RAW mean?
It means that non of the living enzymes in the food have been damaged/destroyed due to processing or high heat. Food is considered raw if it’s cooked under 108 degrees F.
Why eat RAW food?
Raw food contains all of its nutrients which are essential for our health. Cooked foods are often missing those minerals and vitamins that we need due to the processing/heating. For example B Vitamins are essential for energy, immune function, disease prevention and more and when food has been heated those B vitamins are destroyed.
This RAW Zucchini Pasta is anything BUT boring!
The marinara has a really strong, bold and lightly salty flavour and the noodles are extremely easy to make. You can purchase a Spirooli online for roughly or you can purchase a Julienne Grater.
If you’ve had raw food before and find that your stomach can get upset then feel free to make the sauce and then heat it up in a sauce pan to get that warm pasta feel.
